Wraps or tacos are always a good excuse for when you quick want something on the table that is also somewhat healthy. You can vary endlessly with the filling, making them always delicious. This recipe, inspired by the recipe for easy black bean sweet potato tacos on The Full Helping ️, combines sweet potatoes with a "tangy" black bean spread. The lime gives it a nice tangy kick.

Instead of vegan feta from the supermarket, you can make your own alternative. A substitute for plant-based feta is not at all difficult to make. For example, make it based on cashew nuts like the cashew nut cheese at bevegan.be ️. Prefer no nuts? Then this vegan feta based on tofu from Vegetus is also very tasty.

Serve these vegan tacos with toppings of your choice. Want some extra vegetable to go with it? Then serve it with salsa (such as Pico de Gallo).

    zoete aardappel in blokjes van ca. 1cm
  • 1 tbsp
    vegetable oil
  • pepper and salt
  • tacos or wraps
  • 150
    vegetable feta
  • 150 g
    lettuce for example, romaine or arugula
  • toppings of your choice such as red onion, tomato, cilantro, jalapeno

FOR THE BLACK BEAN SPREAD

  • 1 can
    black beans
  • 0.5
    lime juice of
  • 1tsp
    balsamic vinegar
  • 0.5tsp
    smoked paprika
  • 0.5tsp
    ground coriander
  • 0.5tsp
    salt

Preparation

step 1

Preheat the oven to 200°C. Mix the sweet potato cubes with the oil, pepper and salt. Roast them in 25 to 30 minutes until tender in the preheated oven. You can also cook the sweet potato in the airfryer. Then they are ready in about 15 minutes . Stir them halfway through

Meanwhile, make the black bean spread. To do this, put the ingredients in a food processor and pulse a few times until it becomes a spreadable mass. If necessary, add 1 or 2 tablespoons water if it is too dry

Prepare the tacos or wraps according to the package directions. Spread some black bean spread on the center of the wrap and top with the sweet potato, lettuce, feta and remaining toppings
