French toast with blueberry compote and coconut

These plant-based French toast are milk and egg-free and still very tasty. Delicious on their own or with a more elaborate breakfast.

French toast remains delicious. Bread dipped in a mixture of egg and milk, then baked in butter. A dish that works very well in its simplicity, but of itself is not very plant-based . Fortunately, French toast without egg and with vegetable milk is also very tasty. French toast is perfect for making up old bread. But even if you don't have old bread, you can also make very good French toast from sturdy (sourdough) bread.

On search for breakfast recipes, I came across chia seed pudding several times. They also pay attention to it in VEGAN from The Happy Pear ️. There they recommend combining it with a homemade fruit compote. I thought it would be nice to make a variation with blueberries, cinnamon and coconut. The taste was fine, but I still have a hard time getting used to the texture of pudding made from chia seeds. The compote was a keeper.

On minimalistbaker.com, I found this basic recipe for vegan French toast ️. In terms of ingredients , it was very similar to what I used for the chia seed pudding, but as a base for French toast. You grind the chia seeds as finely as possible first, so you won't encounter them in the final dish. I kept the French toast as simple as possible, because it is already delicious on its own. Together with the blueberry compote and coconut, it is a delicious breakfast dish.

Tips

  • Replace the agave syrup and vanilla (flavoring) with some vanilla sugar
  • Grinding chia seeds is easiest with the chopper of your hand blender
  • As with pancakes, it's important to get the pan thoroughly hot before you start frying

for 6 French toast

  • 1 tbsp
    chia seed finely ground
  • 0.5 tbsp
    maple or agave syrup
  • 200 ml
    oat milk or other vegetable milk
  • 0.5tsp
    cinnamon
  • 0.5tsp
    vanilla extract
  • 200 g
    blueberries fresh or frozen
  • 3 tbsp
    water
  • oil e.g. rapeseed or coconut oil
  • 6 slices
    sturdy (or old) bread For example, sourdough
  • coconut rind

Preparation

step 1

Mix the chia seeds with the agave syrup, oat milk cinnamon and vanilla in a deep dish. Set aside and let the ground chia seeds soak 10 to 20 minutes

Meanwhile, start the blueberry compote. To do this, put the blueberries with the water in a small sauce pan and set over low heat. Let the blueberries soften in about 20 minutes . Stir frequently and see if additional water is needed. Fresh blueberries often need more water than those from the freezer. If your compote is too watery, you can let it cook for a while without a lid to allow the liquid to evaporate

For the French toast, heat (coconut)oil in a skillet over medium/high heat. Fry the French toast about 3 minutes per side until golden brown

Serve with the blueberry compote and grated coconut
