Tabbouleh is a delicious salad commonly eaten as mezze. Actually, parsley is one of the basic ingredients, but I am not a fan of it myself. Therefore, I use coriander instead, which is also very tasty in this dish. In case you don't like cilantro: use parsley.

This recipe was inspired by a recipe by Jamie Oliver ️. It is so easy, delicious and nutritious that I make it regularly, especially in the summer. To make it even easier, I often use lentils from can instead of making them myself cook. This dish has lots of flavor because of the spices, so be sure to use plenty.

ingredients

for 4 people as a side dish, 2 as lunch.

  • 1 can
    bruine linzen uitgelekt en afgespoeld
  • 3
    spring-onion thinly sliced
  • 200 g
    cherry tomatoes halved
  • bunch
    fresh mint leaves coarse chopped
  • bunch
    fresh coriander leaves coarse chopped or parsley
  • 2 tbsp
    olive oil
  • lemon juice to taste

Preparation

Mix the lentils, spring-onion, cherry tomatoes and herbs in a large bowl

Stir in the olive oil , and add just as much lemon juice until you like it. Season to taste with pepper and salt and serve
