As we begin to move more and more toward spring , salad is coming to the table more often. Unfortunately, in March there are not so many green leafy vegetables at season; the choice is usually limited to corn salad and baby spinach.

So instead of a green salad, try this salad from celeriac . It is similar to coleslaw - or coleslaw - but instead of cabbage you use celeriac. This has a fresher taste, giving the salad a completely different character. However, this salad is equally delicious to serve at bbq , or to take with you in the picnic basket.

Tips

  • Use a mandolin to cut the celeriac and apple into thin strips
  • Instead of cutting the celeriac and apple into thin strips, you can grate them
  • Replace the celeriac with white cabbage for a cabbage salad

ingredients

for 2 people

for the dressing

  • 2 tbsp
    olive oil
  • 2 tbsp
    lemon juice
  • 1tsp
    mustard
  • 1tsp
    maple or agave syrup
  • pepper and salt to taste

for the salad

  • 200 g
    knolselderij in dunne reepjes
  • 1
    apple with skin in thin strips
  • 60 g
    walnuts coarsly chopped

Preparation

step 1

Mix together all ingredients for the dressing. Set aside

step 2

Put the strips of celeriac and apple in a bowl. Mix the dressing in well - use your hands if necessary. Cover the bowl and put it in the refrigerator at least 30 minutes to allow the celeriac to soften a bit

step 3

Season with additional pepper and salt if desired . Spoon in the walnuts and serve
