This rice dish is inspired by Portuguese cuisine. It is a delicious hearty dish, yet already with a small nod to spring. The green cabbage and beans make this rice extra nutritious. Because it's so easy, I make it with some regularity. Often as a side dish instead of "bare" rice, but sometimes on lazy days just without anything with it.

This dish is great for reheating the next day. So take any leftovers with you especially as lunch.

Tips

  • Try frying a vegan (chorizo) sausage with the onion for extra flavor
  • How long the rice needs to cook depends on the type of rice you use. The cooking time is slightly longer than it says on the package
  • Add some extra vegetables if serving as main
