This rice dish is inspired by Portuguese cuisine. It is a delicious hearty dish, yet already with a small nod to spring. The green cabbage and beans make this rice extra nutritious. Because it's so easy, I make it with some regularity. Often as a side dish instead of "bare" rice, but sometimes on lazy days just without anything with it.
This dish is great for reheating the next day. So take any leftovers with you especially as lunch.
Tips
for 4 people
Heat oil over medium-high heat in a large pan that you have a lid for. Fry the onion along with a pinch of salt until it begins to brown. Add the garlic and smoked bell pepper and sauté for a minute
Turn down the heat and add the vinegar, beans including liquid and cabbage and stir well. Cook everything for another minute
Add the tomato paste, soy sauce and bouillon and stir to combine. Bring to a boil and simmer on low heat 10 minutes
Add the rice and simmer gently for about 20 more minutes until the rice is tender. The rice should still be slightly moist. Season to taste with pepper and salt and serve
