Leeks and portobello mushrooms with a walnut dressing - oven or bbq

While the portobello becomes almost meaty, the leek transforms into a very soft, almost creamy product. Delicious from the oven, but almost more delicious from the bbq.

Maybe it's starting to be noticed: I like dishes that you can pop into oven and then not have too much to worry about. If you also don't need that much ingredients and it's easy to prepare, it's quick good. The oven is very good at transforming simple ingredients into something very special.

The same goes for this dish. It comes from The Green Barbecue from Rukmini Iyer and is actually meant to prepare on a barbecue. And while it certainly is delicious, this is also a side dish you'll want to eat when the weather isn't as nice and you just want to stay inside. Slowly roasting the vegetables in the oven also gives an incredibly delicious result, and well worth the wait. It does take a little longer than if you bake the leeks and portobello on the bbq, but at the same time the oven is a lazy option including less work. Whatever you choose: it's delicious either way.

for 3 people

for the dressing

  • 1.5 tbsp
    olive oil extra virgin
  • 0.5
    lemon juice from
  • 1tsp
    thyme
  • 50 g
    walnuts coarsly chopped
  • 0.5tsp
    sea salt flakes, if you have them

Preparation

step 1

Oven: Preheat the oven to 180°C

step 2

In a large bowl, mix the leeks and portobello with the olive oil and sea salt flakes. Take care not to damage the portobellos

step 3

Place the portobello, gill side down, in a large baking dish. Divide the leeks around it.

Oven: Roast the vegetables in the oven for 45 minutes until the portobello is cooked through and the leeks are soft. After 15 minutes, turn the portobello so the gills side is up and stir the leeks. After another 15 minutes, stir the leeks again, but leave the portobello's with their gills side up

step 5

Bbq: Grill the vegetables in 15 to 20 minutes until tender. Turn over every 5 minutes

step 6

Mix together all ingredients for the dressing

Put the vegetables in a serving bowl, spread the dressing on top and serve hot
