This fresh salsa - or Pico de Gallo - is a deliciously simple dish, which is great for scooping up with tortilla chips or as a side dish. For example, combine it with Mexican rice or with a Mexican bean dish. It's a very easy (and tasty!) way to eat some extra vegetables.
The salsa will turn out the tastiest if you use beefy tomatoes, without too much moisture. Is the flesh of your tomatoes rather moist? Then pat it with a piece of kitchen paper before proceeding. With a food processory, this snack will be on the table in no time. Chopping by hand also works very well.

This recipe is easier to make with a chopper or food processor. You can also chop by hand, but it will take you a little longer. When chopping by hand, start at step 5

Put all ingredients into the food processor. Pulse a few times until everything is chopped. It is not meant to be a sauce, so don't overpulse
Taste, and adjust seasoning if necessary. Want more spicyness? Then add a few pepper seeds.
By hand: Chop the cherry tomatoes, red onion and pepper very finely. Also finely chop the cilantro
Mix in a bowl with the remaining ingredients. Taste, and adjust seasoning if necessary.
