plant-based Barbecuing doesn't have to be boring. So much is possible with vegetable ! What can be a challenge is getting enough filling in. In this dish, the gnocchi takes care of that. Inspired by a recipe by The Green Barbecue from Rukmini Iyer, who he says often grills gnocchi to make it nice and crispy. The same goes for gnocchi grilled on the barbecue: this one gets a nice crispy coating.

This is certainly not a complicated dish, but be careful about the timing of the gnocchi. You don't want it overcooked, because then you run the risk of it falling off the stick during the instructions.

Tips

  • You can prepare this dish very well in advance. Then prepare the skewers, but do not brush them with the oil
  • You can use other ingredients besides bell pepper , such as cherry tomatoes

  • 200 g
    gnocchi
  • 0.5 tbsp
    green pesto
  • 1 tbsp
    olive oil plus extra to cover
  • 1
    rode paprika in stukjes die net zo groot zijn als de gnocchi
  • black pepper

for the dressing

  • 2 tbsp
    green pesto
  • 1 tbsp
    olive oil
  • 2 tbsp
    lemon juice
  • pepper and salt

Preparation

step 1

Cook the gnocchi about 2 minutes in salted water. Drain them immediately when they surface and rinse with cold water. Drain

step 2

Mix the pesto with the olive oil in a large bowl. Add the bell pepper and gnocchi and stir well. Season with black pepper and thread everything onto barbecue skewers

step 3

Just before grilling, brush the skewers with some oil. Cook them on a hot barbecue until the gnocchi is crispy and the skewers get nice grill stripes. Turn over regularly

Make the dressing by mixing all ingredients together. Taste to see if more pesto or lemon is needed. Season to taste with pepper and salt

Serve the gnocchi bell pepper skewers with the dressing
