I don't eat a lot of bread, but when I do, I find it hard to find good plant-based toppings. Especially because I find savory toppings much tastier than sweet. And no matter how delicious hummus is, sometimes I just want something different. Of course there are delicious vegan spreads for sale, but they are often either not very healthy, or not very affordable.
Fortunately, it's not a lot of work at all to make your own. This is a plant-based alternative to chicken curry salad based on chickpeas. It is inspired by the English coronation chicken, which was devised in 1953 for the coronation of Queen Elizabeth II. Its main component is curry-flavored chicken, possibly supplemented with ingredients such as crème fraîche and raisins.
In this recipe you don't miss the chicken at all. The combination with curry, vegetable mayonnaise and mango chutney makes for a delicious salad with lots of flavor. Delicious for on bread or a cracker.
