celeriac is becoming increasingly popular. This tuberous vegetable doesn't necessarily look attractive in stores with its brown color and weird lumps and roots. Fortunately, people are increasingly looking through that, and more and more incredibly delicious recipes are appearing that incorporate celeriac .
It is therefore a vegetable that can be used in all directions. Because of its versatility, it is often used to make a burger, but also as a healthier alternative to fries. Or, as in Ottolenghi's roasted celeriac with coriander seeds, it is cooked whole in the oven . If you do like roasted celeriac, but don't have the time or inclination to wait 3 hours for it (even though that recipe is recommended), then this recipe is for you.
In this recipe , the celeriac is cut into pieces and roasted in the airfryer or oven. You can choose to leave the pieces slightly larger and incorporate the celeriac into a salad, but it is also very nice to eat the roasted celeriac as fries. It goes well with some sriracha mayonnaise (to do this, mix some mayonnaise with sriracha sauce and a little lemon juice).

Preheat the airfryer to 180°C. Do you prepare it in the oven? Preheat it to 190°C.
Mix the sliced celeriac with olive oil and half the lemon juice. Season to taste with pepper and salt
Airfryer: Place the pieces in the basket of the airfryer. Bake about 20 minutes. Shake the tray halfway through
Oven: Spread the celeriac on the baking sheet. Make sure it is in one layer or it won't get crispy. Bake it about 25 minutes, depending on the size of the pieces. Flip the celeriac halfway through the baking time.
Before serving, drizzle the celeriac with some additional lemon juice. If desired, garnish with some lemon wedges and some freshly chopped cilantro
