When you think of chicory from oven , you already quick think of chicory with ham and cheese. I wouldn't even want to try to make a vegetable version of that, because I can't imagine it would be delicious. This recipe for caramelized chicory from oven combines chicory with garlic and orange. This gives you a dish with a lot of flavor and really brings out the bitterness of the chicory.
This is typically one of those dishes that doesn't require that much work. The endive does need a little time in the oven and you also need to flip it occasionally, but beyond that it's maybe 5 minutes work. The result is a tasty and healthy side dish for the holidays, where the bitterness of the chicory goes well with the chunky pumpkin puree from Ottolenghi's Flavour.

Preheat the oven to 180°C. Grease the baking dish with the oil
Place the halved endives cut side up in the baking dish side by side. Divide the cloves garlic between them and season with black pepper. Top with some sprigs of fresh thyme
Mix the orange juice, maple syrup and vinegar well and spread over the chicory
Bake the chicory in the oven for an hour, turning 2-3 times. 10 minutes before the end time, spread the orange zest over the endive and bake for another 10 minutes .
