White bean burgers with potato and sage

Homemade veggie burgers are always good. They just tend to fall apart at bbq . Not with this recipe! Because you bake the burgers first in the oven until they are actually done, the result is much firmer than if you don't. It does take an extra half hour, but if you leave the oven on after cooking the ingredients , it's almost insignificant.

Barbecueën blijft leuk, en misschien vind ik een vegan bbq nog wel leuker dan een met vlees. Vooral zelfgemaakte burgers kun je zo gezond maken als je zelf wilt, en ook groenten van de barbecue zijn heerlijk. Nog een voordeel is dat ik me na een plantaardige barbecuemaaltijd met lekker veel groenten een stuk minder opgeblazen voel. Deze burger is dan wel weer redelijk machtig, maar ook heel voedzaam dankzij de witte bonen.

Like well more plant-based dishes suitable for the bbq, this recipe comes from The Green Barbecue f rom Rukmini Iyer. Now, it is a very nice book. In doing so, I had not seen white bean-based burgers before, but it turns out to work very well. Combined with sage and mustard, it's very different from burgers with black or kidney beans.

Tips

  • You can make the burgers well in advance. Let them cool and store in an airtight container. That way they will stay good for a few days.
  • You can also take them to a picnic, and barbecue there!
  • Delicious on a sandwich with some lettuce, tomato, mustard and ketchup
  • For this recipe you will need a food processor

ingredients

for 6 burgers

  • 200 g
    aardappelen geschild en in stukken van 3 à 4 cm
  • 1
    onion in 8 wedges
  • 2 cloves
    garlic unpeeled
  • 1tsp
    black pepper ground
  • 1tsp
    sea salt flakes, if you have them
  • bunch
    fresh sage coarse chopped
  • 1 tbsp
    olive oil
  • 1 can
    white beans drained but not rinsed
  • 2tsp
    mustard
  • 2tsp
    potato starch or cornstarch

Preparation

Preheat the oven to 180°C

Put the potatoes together with the onion, garlic, pepper, sea salt, sage and olive oil in a small baking dish and mix together. Bake this 30 minutes in the oven until the potato is tender. Leave the oven on while you make the burgers

Vis de teentjes knoflook uit de ovenschaal en knijp ze uit in de keukenmachine. Voeg de overige groenten uit de oven toe, samen met de witte bonen, mosterd en aardappelzetmeel. Pureer het tot een dikke puree. Niet te lang, want dan wordt het plakkerig. De pulse-knop kan hier handig voor zijn

Cover a baking sheet with baking paper. Using two spoons, form burgers from the mashed potatoes. This is a little bit of a hassle. The burgers will be a little jagged, but that's okay

step 5

Bake the burgers 25 to 30 minutes in the oven. You can eat them right now, or grill them later on the bbq
