Sometimes you don't feel like making something complicated. This rice- lentil dish is a complete meal and easy to make. Because of the za'atar yet a bit special.

Sometimes you just feel like something simple and nutritious. This dish is perfect for that. It's easy to make, is not very distinct in taste - although the olives and za'atar still give it a little something special, and also very healthy. This recipe is a combination of the ingredients of this recipe with rice and lentils on Running on Real Food and the instructions from Shane and Simple ️. Baking it briefly with the onion at rice makes this dish look a bit like pilav.

In this recipe I use zucchini and bell pepper as vegetable, but it lends itself to adding additional ingredients or using other vegetables. For example, it is also very tasty with spinach. Or try this recipe for Mujadara at indenvreemde.nl ️. This combines rice and lentils with caramelized onions. Very tasty!

In a hurry? Then make this dish with white rice and lentils from can. Then it will be on the table in about 20 minutes . The extra time it takes to use it with brown rice and dried lentils is passive time: it's not more work, but you have to wait a little longer for the food to be on the table. Do you want to use brown rice but lentils from can? Then add the lentils after the rice has cooked about 20 minutes .

Heat oil in a thick-bottomed pan. Fry the onion and bell pepper with a pinch of salt until the onion becomes glazy. This will take a few minutes. Optionally, you can fry the onion a little longer until the onion turns a little darker. This gives a slightly deeper flavor to the dish.

Stir in the eggplant, lentils and brown rice . Add the bouillon or the water and stir again. Bring to a boil, reduce heat to low and simmer for about 40 to 45 minutes .

When the rice and lentils are cooked, and all the liquid has been absorbed, add the olives and za'atar . Season to taste with pepper and possibly some extra salt.
