These vegan air fryer breakfast burritos are a perfect start of the day. With tofu and black beans, you'll have your first serving of plant-based protein right away.

Wraps are always delicious. They are quick and easy to make, and suitable for all times of the day. Eat them for lunch, dinner, snack, or even breakfast. A burrito is a rolled up wrap, with the sides folded inward. Because this burrito is finished in the air fryer, the outside gets a little crispy while the burrito keeps its shape.

Want some extra vegetables for breakfast? Then serve some salsa or guacamole alongside the burrito's.

Tips

  • These burritos freeze well. Make them until the step where you brush them with the oil. Then you can freeze them in an airtight container or freezer bag. Plan ahead before eating them, and put them in the refrigerator the night before. The next morning, brush them with the oil and put them in the airfryer at 180°C for about 6-8 minutes. In a hurry? Put them in the microwave for 30 seconds
  • Don't be tempted to put too much stuffing in the wrap. You want to be able to fold the sides when you wrap up the rolls

  • Vary with toppings of your choice. Make the pickled red onion a day (or a month, as it keeps for a long time) in advance

for 4 burrito's

for the tofu scramble

  • 1 tbsp
    oil
  • 200 g
  • 0.5tsp
    ground cumin seed
  • 0.5tsp
    kurkuma
  • 2tsp
    soy sauce
  • pepper and salt

Preparation

step 1

First, make the tofu scramble. Heat the oil in a pan and fry the spices for a few minutes until they begin to smell. Crumble the tofu into the pan and stir-fry a few minutes until heated through and beginning to brown

Fill the tortillas with some spinach leaves, some of the tofu scramble and all the other toppings. Fold the sides in first. Then fold the back over the filling and roll up tightly. Place the burrito with the folded side down in the basket of the airfryer. Repeat with the other tortillas

step 3

Bake the burrito's 6-8 minutes at 180°C in the airfryer until they begin to brown. Serve immediately
