You know the drill: for a recipe , you need one stalk of celery and the rest of the stalk is languishing. This recipe offers a solution to that.
Many soups are bound with cream, or a vegetable version of it. In the recipe for this soup, no cream is used to bind the soup, but potato. This still makes it a nice creamy soup that is also extra filling. Still, it remains a light soup that is very suitable to eat as starter . Do you like a little more spice? Then garnish the soup with some chili flakes.
For this recipe you will need a blender or hand blender.

Heat oil in a large thick-bottomed saucepan over medium-high heat
Fry the celery, onion, garlic and potatoes 8 to 10 minutes. Stir frequently
Add the broth and bring to a boil. Lower the heat and let it simmer for about 10 minutes or until the potatoes are tender
Add the dill and puree the soup with a hand blender or in the blender until creamy
Season to taste with pepper and salt. Garnish the soup with the chili flakes
