As a somewhat responsible sweet snack, a slice of banana bread is always very tasty. More people think so, as there are actually more than enough recipes online. Not all of these are vegan, and the focus also varies from recipe. Some recipes are gluten-free and focus very much on health. This recipe is a slightly more upscale version, with pecans and chocolate chips. It is certainly not the healthiest version, but it is very tasty.
Banana bread is fortunately very easy to make vegan . The V'gan lifestyle magazine ️, issue 02 2023 features a recipe for "perfect banana bread," headlined "Sweet dreams are made of these." So it's an extra fancy banana bread, with pecans and chocolate chips. Without these ingredients , the bread is probably still very tasty (although I haven't tried it), while immediately making the bread about 5 euros cheaper. I replaced the light brown caster sugar from V'gan's recipe with dates. This makes banana bread a little healthier. If you prefer sugar, replace the dates with 100 grams of light brown caster sugar.
The banana bread stays good for up to a few days, but fortunately it freezes well. To do this, first cut the bread into slices, and freeze them separately.

Preheat the oven to 180°C. Prepare a cake tin by greasing it and lining the bottom with baking paper
In a large bowl, mix well the dry ingredients (flour, baking soda, specula spices and a pinch salt)
Cut the dates into small pieces
In another bowl, mash 3 of the 4 bananas. Add the melted coconut oil, dates, almond milk and vanilla extract and stir until combined. It's okay to leave a few lumps in there
Add the banana mixture to the dry ingredients and mix into a batter. Finally, sprinkle in the pecans and chocolate chips
Spoon the batter into a cake tin. Cut the remaining banana in half lengthwise and place it on the batter with the cut side up. Press the banana slightly into the batter.
Bake the bread about 45 minutes in the oven. Let it cool for a while before cutting it
