Baba Ganoush is een heerlijk simpel bijgerecht dat als dip of spread gebruikt kan worden. Het heeft wel wat weg van hummus, al gebruik je aubergine in plaats van kikkererwten. Baba Ganoush kun je kant-en-klaar in de winkel kopen, maar die is vaak aangelengd met olie/en of water en zeker niet goedkoop. Terwijl zelf maken heel makkelijk is! Ottolenghi ↗️ heeft een heerlijke versie, maar het kan nog een stuk eenvoudiger. Je hebt maar 5 ingrediënten nodig om dit Libanese gerecht zelf te maken. Serveer het met wat groenten, op een cracker, of combineer het met gegrilde groenten op brood.
Je kunt de aubergine op verschillende manieren garen. Het makkelijkst is in de oven of airfryer ↗️, maar je kunt er ook voor kiezen om het op de bbq klaar te maken. Voor deze stap wordt wel wat geduld gevraagd, maar daar tegenover staat dat je er bijna geen werk aan hebt.

Start by preparing the eggplant. Preheat the oven to 200°C. Pierce the eggplant several times with a fork, and cook in the preheated oven for about an hour. Turn over halfway through. An air fryer would be perfect for this
Let the eggplant cool until it is manageable. Cut open the skin and spoon the flesh into a large bowl. Stir a bit so it becomes a little smoother
Add the remaining ingredients and stir until fairly smooth. Don't mind if it isn't completely smooth though
